I am sharing with you a recipe from my kitchen. It's a recipe that saves myself and the hungry kids when the morning comes, it is even prepared the night before! Making it extra easy when you wake up and want your coffee, you can sit down - maybe! and relax while the aroma of baked oatmeal is filling the house!
Grease a 9x13 pan and set aside.
In a bowl mix together:
3 cup oats (rolled or quick)
1/3 cup melted butter or coconut oil or a mix of both (If desired, add 1/3 cup applesauce instead of oil/butter.)
1 1/4 cup milk
1 1/2 t. vanilla
1/4-1/2 cup honey, maple syrup, or organic sugar
a couple shakes of nutmeg and cinnamon
1 1/2 t. baking powder
1/4 t. salt
*optional add-ins: blueberries, any frozen fruit finely chopped, or raisins and nuts.
Pour mixture into the greased 9x13 pan and cover and place in the fridge. Or if it's the winter, place outside on your deck like I do! :)
In the morning, bake uncovered at 375 for 25 minutes.
My kids LOVE to smother butter on top and if I held back some of the sugar in the recipe, I let them pour real maple syrup on (is there any other kind than real?!). They love me and their bellies are full. Until a few hours later!
